Fuyu is a non-astringent Asian persimmon, which means you can eat it while it's still firm, crisp and sweet, like an apple. (Astringent types have to be soft as jelly before they're edible.)
The fruit is flat, round and bright orange, with a sweet, honeyed flavor. It ripens in the fall, often after the leaves drop, so the tree is covered in orange fruit.
Fuyu grows well in most South Jersey winters, has very few pest or disease problems, and the fall color is beautiful.
Asian persimmons can be injured below about 10°F, and Salem County winters occasionally get colder than that. Plant in a sheltered, sunny spot, and wrap or shelter young trees in their first winters. Because the fruit sets without pollination, a little early fruit drop is normal.
How it tastes
Sweet, mild and honeyed. Eat it firm and crisp like an apple, or let it soften until it's jammy. No puckery astringency.

Growing tips
Watch for: Very few pests. Fruit drop from drought, poor drainage or too much nitrogen fertilizer
- Full sun and a sheltered spot. Fuyu is hardy here, but young trees appreciate protection from harsh winter wind for the first year or two.
- Very few pests or diseases bother persimmons.
- Water well through the first two summers. Established trees handle dry spells.
- Little pruning needed. Just remove crossing or broken branches in late winter.
